Monday = Rye-fun day

We had a tasty surprise in Poetry today... someone brought in a loaf of Swedish rye bread!

It had hints of molasses, caraway, anis, orange peel, and even a little beer! It would be the perfect holiday bread, so I might try to make a loaf in the coming weeks.

And look at this cute little cutting board!

I know I'm getting boring with the repetition, but I really have to eat up all my leftovers before I go home tomorrow (!). And hey, I never used them the same way once!

Salad with roasted veggies, tofu, and spinach, with apple cider vinaigrette (I only used about half):

Fat free Archer Farms lemon yogurt:

I packed half of a PB&J sammie, but I'm going to eat it as a snack a little later. That bread filled me up!

I'm counting down the hours (3) until I can go home and get a little rest before getting back to the grind. I couldn't have had more than 5 hours of sleep last night, although I did take a 3- hour nap yesterday.... I've always needed a lot of sleep.

Happy Monday!
