Oatmeal protein pancake, take 1

I remember first reading about protein pancakes when I was still in high school, on one of the SELF forums. I think 4 or 5 years is long enough to wait to try a recipe, don't you? I colored it with pumpkin, my flavor of the week (that song is going to be in my head all day now!). I wanted to add vanilla extract to the mix, but I couldn't get the bottle open... how sad is that?! I'm definitely making this again; I can't wait to experiment with different ingredients.






1/3 cup oats

2 egg whites

1 tsp baking powder

1/2 cup pumpkin, most mixed in but some reserved for spreading on top

maple syrup for dipping

1/2 tsp PB, spread on top


Oh! Can't forget my sweet snackies from last night! I had one small chocolate rice pumpkin (like a mini crunch bar) while I waited for Jalene to come home, then we made sundaes: 1/2 chocolate peanut butter sandwich cookie, Edy's ice cream, dark chocolate sauce. Mm-mm good!

Hey Katie, protein pancakes you say? You may be interested in Banana Pancakes, super high in protein and pretty close to your recipe, just one more ingredient really.

And speaking of pumpkin pancakes...you may want to keep an eye out for the next pumpkin recipes I'm sharing, but shh.
